There’s really not much to say other than, this truly is 24-“carrot” gold.
Carrots. Kerrygold.
That’s it.

24 Carrot Gold
2 large organic orange carrots
1 large organic ghost white or yellow carrot
2 Tbs. Kerrygold butter
sea salt
Wash and peel the carrots. Using a food processor shredding attachment or box grater, shred into thick “noodles.”
Heat butter in a small skillet over medium heat. Add carrots and sauté until soft and delicious, and super saturated in the “gold.” Add a bit of extra salt and then devour.
**For a vegan version, use the “GOLD STANDARD” in coconut oil. Although, I must warn you: there truly is nothing as good as Kerrygold.
I should let you know, I am–we are–now drinking the Kerrygold Kool-Aid. Made the conversion a few months back. A couple bonus insights: (1) we eat less butter now than we did before, maybe because a little of this goes a long way, in a good way, and (2) Trader Joe’s sells Kerrygold at the best price I’ve seen in town. Around $3.69 for the block. Hashtag GoodStuff. Hashtag RightAgain. Looking forward to trying this recipe both vegan and butter ways. Hope you’re well.
Welcome to the Kerrygold Kool-Aid drinking club! 🙂 In all actuality, we certainly eat/drink MORE (much more) butter than ever before, simply because of how magical the gold is. It’s delicious. Amazing. Intoxicating…just even on a spoon! Oh, it’s sooooo good!
I must recommend traveling the distance to Costco. I think it’s around $7 for 3 of the blocks. You simply can’t beat it!!!
