Starting the day off with Perfectly Poached eggs, sauteed kale is amazing.  It’s delicious.  It makes for a f.a.b.u.l.o.u.s. day.  Is there anything better?


Perfectly Poached Eggs and Sauteed Kale

2 pastured eggs
1 Tbs. apple cider vinegar

Fill a large saucepan with 2 to 3 inches of water and bring to a boil over high heat. Reduce the heat to medium-low, pour in the vinegar and keep the water at a gentle simmer.  Crack an egg into a small bowl. Holding the bowl just above the surface of the water, gently slip the egg into the simmering water. Repeat with the remaining egg. Poach the eggs until the whites are firm and the yolks have thickened but are not hard, 2 1/2 to 3 minutes. Remove the eggs from the water with a slotted spoon, and dab on a kitchen towel to remove excess water.
Serve over sauteed kale.

2 Tbs. Kerrygold butter
1 bunch Lacinato kale, finely chopped
sea salt and pepper

Over medium heat, melt the butter and add the kale.  Sautee until soft and coated in Kerrygold deliciousness.  Finish with salt and pepper.

Is there really anything better?
