Sometimes, in order to start the day off right, you just need something PURPLE. The violet hue is said to be the color of both royalty and spirituality. Of course you need that first thing in the morning!
A Purple Start
2 Tbs. coconut oil + 1 Tbs. for the eggs
1/4 sweet yellow onion, thinly sliced
1 large fennel bulb, core removed and sliced
2 c. red cabbage, sliced
4 pastured eggs
Sea salt and pepper, divided
In a large skillet, over medium heat, melt the coconut oil. Once the pan is thoroughly coated, add the onion. Saute for 1-2 minutes, and then add the fennel. Cook both until they begin to caramelize. Add the cabbage and a generous amount of salt. Continue to cook and caramelize until perfectly sweet. Transfer to two serving plates (there may or may not be leftovers from the two plates, depending upon how hungry you are this morning).
Add the additional coconut oil, if need be, and melt until the pan is ready for the eggs. Fry the brightly colored pastured eggs and serve atop your perfectly purple delight. Add salt and pepper to your pleasure.
