Remember when you used to fry up some Dinosaur Eggs for breakfast after a Girl Scouts sleepover?

Of course you don’t, but I do!

Hollow out the bread, melt some butter, crack and egg ~ wham, bam ~ Dinosaur Eggs!

For breakfast today I present a bit of a heartier form of the dino toast.
Hefty bread and healthy avocado…and good, sharp cheese.

Yum!

Avocado Dinosaur Eggs

2 Tbs. butter
crusty bread
1 large avocado, peeled and pitted
2 large eggs
1/4 cup parmesan cheese, shaved
sea salt and pepper

Halve the crust bread loaf and pull out enough of the center to house one egg on one side and 1/2 avocado on the other.
Melt the butter in a large skillet over low heat.
Toast the two pieces of bread, “hole side” down, for 1-2 minutes.
Flip and fill one piece with 1 egg and the other piece with 1/2 avocado and the second egg.
Sprinkle with 2 Tbs. cheese and cover to cook 3-5 minutes on low heat. Cook enough “poach” each egg and melt the cheese. 
Remove from skillet, slice the second half of the avocado thinly and place atop the side currently sans avocado.
Top both pieces with remaining cheese and salt and pepper!
