Not too sweet and definitely not too savory. Here we go pleasing Goldilocks again with this artisanal version of a traditional chocolate chip walnut banana bread.

Banana Chocolate Chip Walnut Artisanal Bread

1 cup warm water
2 Tbs. raw sugar
1 1/2 tsp. active dry yeast

3 2/3 cup all purpose flour
2 medium bananas, mashed
2 cups dark chocolate chips
1 cup walnuts, chopped
1 1/2 tsp. sea salt

In a small bowl, combine the water, sugar, and yeast. Let sit for 10 minutes.
Meanwhile, in a separate large bowl, combine the flour, bananas, chocolate, walnuts and salt. Drizzle in the yeast water after 10 minutes. Combine well with a spatula until all ingredients are evenly dispersed. 

Cover loosely with a towel and let sit in a warm, well ventilated area to rise for 2 hours.
Transfer to the fridge and chill for 4 hours, or overnight. (You may leave the dough in the fridge for up to seven days, but cover tightly after 1 day).

Remove the dough from the fridge and form into a boule with floured hands. Place on a parchment lined baking sheet and allow to “proof” to room temperature for 40 minutes, while the oven is preheating to 450 degrees.

After 40 minutes at room temperature, bake at 450 for 20-25 minutes, until golden brown on top. The bread will sing as you remove it from the oven and break it open.
