Honored, once again, to accompany these children on their learning journey in the kitchen, we tackled “Better Breakfasts on the Go.”

Simple, slightly sweet, a little bit different, and super duper easy and fun – these breakfasts are simply BETTER, yes they are.

OVERNIGHT OATS

  • 1 cup oatmeal
  • 2 cups milk of choice (cow’s milk, almond milk, full fat coconut milk, etc.)

Mix-In Combo Ideas:

  • Chocolate Monkey: 1 sliced banana + 1 Tbs. cocoa + 1 Tbs. honey
  • Orange Dreamsicle: ¼ c coconut flakes + ¼ c. o.j. + 1 tsp. vanilla + 1 Tbs. honey
  • Strawberry Shortcake: 6 sliced strawberries + 1 Tbs. strawberry jam + ¼ c. vanilla yogurt
  • Sweet Cinnamon Nutzo: 4 chopped pitted dates + 2 Tbs. peanut or almond butter + cinnamon
  • Blueberry Muffin: 1/4 cup fresh blueberries + ¼ c. walnuts + 2 tsp. brown sugar + cinnamon
  1. Mix all the ingredients together in a bowl or jar just before tucking in for the night, and place in the fridge.
  2. Just before breakfast, remove from the fridge and top the oats with any extra toppings of your choice (crunchy nuts, raisins, cinnamon, etc) and extra milk, if desired.

The oats can be eaten cold or warmed in the microwave for 30 – 60 seconds.

The oats will keep in the fridge covered for 2-3 days.

Each recipe serves one hungry kiddo or two bird-like breakfast eaters.

SINGLE SERVING SWEET BREAKFAST BURRITOS

  • 1 small tortilla (white or whole wheat)
  • 1 egg
  • 2 Tbs. milk (cow’s, coconut, or almond)
  • 1/8 tsp. salt
  • 1 tsp. cinnamon sugar
  • 2 tsp. coconut oil or butter
  • 2 Tbs. fresh blueberries (or any other berries)
  • 1 Tbs. coconut butter (or almond or peanut butter)
  1. Whisk together egg, milk, salt, and cinnamon sugar in a small bowl.
  2. Heat 2 tsp. coconut oil or butter over low heat in a small fry pan.
  3. Add the whisked egg mixture and stir consistently, to create a scrambled egg.
  4. Remove from heat and place in a line in the center of the tortilla.
  5. Top with fresh berries and coconut butter (or other nut butter). Roll as you would any burrito.
  6. Devour immediately.

CHOCOLATE CHIP BREAKFAST COOKIES

  • 2 1/2 cups oats
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/3 cup real maple syrup or honey
  • 2 tablespoons almond butter or peanut butter
  • 1/4 cup coconut oil or butter
  • 1 very ripe banana, mashed well
  • 2 teaspoons vanilla extract
  • 1-2 cups semi-sweet or dark chocolate chips
  1. In a large mixing bowl mix together the oats, eggs and salt.
  2. In a medium glass bowl combine the maple syrup, peanut butter, and coconut oil or butter. Microwave on high for 1 minute or until the maple syrup is bubbling. Stir to combine the melted peanut butter (or whatever butter you are using) with the maple syrup. Add the mashed banana and vanilla.
  3. Mix the wet mixture with the dry oats until completely combined and the all the oats are moistened.
  4. Cover the mixing bowl and place in the freezer for 10-15 minutes to chill before adding the chocolate chips.
  5. Meanwhile preheat the oven to 350 degrees. Grease a cooking sheet or line with parchment paper.
  6. Remove the dough from the freezer and fold in the chocolate chips. Divide the dough evenly into 12 balls and press into patties or into greased cookie cutters for fun shapes. If the dough is sticking to your hands try wetting them lightly, but just using messy hands may work best.
  7. Bake 10-12 minutes. Remove from oven and allow to cool.

HOMEMADE TRAIL MIX

  • 1 cup raw almonds
  • 1 cup cashews
  • 1 cup pecans
  • 1 cup Cheerios – any variety
  • 1 cup Chex cereal – any variety
  • 1 cup ANY cereal!
  • 1 cup granola
  • 1 cup dried cranberries
  • 1 cup dried apricots, diced
  • 1 cup dates, diced
  • 1 cup raisins
  • 1 cup chocolate chips
  • 1 cup pretzels or pretzel sticks
  • 1 cup goldfish crackers
  • 1 cup M&Ms
  • 1 cup peanut butter chips
  • 1 cup mini marshmallows, of course

Get creative! Mix and match all your favorite munchies together in one large bowl. Fill individual snack bags for breakfast on the go or simply a quick and healthy snack.
