Spring is in the air and how I have been longing for the freshness of a summer salad.

Of course, fresh vegetables are welcome on my plate and to my palate all year-round.  However, when the days are colder, I find myself gravitating more towards the soft warmth of cooked meals rather than to the crisp crunch of a fresh green salad.

Yet, warmer weather is beginning to arrive.  It’s just around the corner.
So…

The Big Ass Salad has arrived.
This may or may not be confused with Elaine’s “Big Salad” for those of you who remember.

In order for this dish to truly be complete, I found myself having to go out and purchase a Big Ass Bowl to accommodate my salad stuff needs.

Throw it all together.  Toss it in a bowl.  Crunch, munch, savor, enjoy.

Remember ~ this is Big Ass.  It serves ONE.

Big Ass Salad

1 head red leaf lettuce, washed, dried, and torn
1 large heirloom tomato, diced
3-4 fresh radishes, sliced
1 large avocado, diced
1 medium cucumber, chopped
2 Tbs. sprouted sunflower seeds
1 large carrot, shredded
Juice of 1/2 lemon
Sea salt and pepper
1 Tbs. Tuscan Herb Olive Oil
1 large chicken breast, grilled and sliced

Toss it all together in your said Big Ass Bowl and enjoy.
