Overnight oats are a “thing.”

They are an internet sensation, in fact.

Take up a quick Google search or a gander at Pinterest and you may be shocked and overwhelmed.

If you’re not on the overnight oats bandwagon, it’s okay.
Neither am I.

Blood Orange Oatmeal-006

A steamy bowl of steel cut oats, just slightly sweetened with the delicate crimson colored raspberry-citrus juice of a blood orange, fresh off the stove, suits my fancy just a little bit more than something lurking in the fridge overnight. Actually, quite a bit more.

Blood Orange Oatmeal

3/4 cup steel cut oats
1 cup coconut milk
1/2 cup water
juice of one blood orange
1 Tbs. coconut oil
1 Tbs. raw honey
1/4 tsp. vanilla salt
1/8 tsp. ground cinnamon
1 Tbs. finely chopped hazelnuts

Combine all ingredients in a small sauce pan. Stir and allow to sit for about 10 minutes. Turn to medium high heat. Stir and allow the oats to absorb the liquids. Cook, stirring constantly for about 5 minutes. This stuff is THICK, so don’t let it stick!

Serve with fresh blood orange slices, a drizzle of coconut milk, and additional hazelnuts.
