Blue cheese burgers…but without a bun?
The answer comes in the form of a polenta patty, or “corn cake,” if you will.
And towered a top each other, we gain a beautiful burger beacon.

Yes. It is remarkable in that we are able to satisfy our tastebuds uniquely, creatively, and beautifully each and every day.

Blue Cheese Corn Cake Burger Beacon

1/2 lb. organic 85% lean ground beef
3 oz. crumbled blue cheese, divided
sea salt and pepper

2/3 cup polenta corn meal
1 1/3 cup water
sea salt and pepper

Bring the polenta and water to a boil in a small sauce pan. Season with salt and pepper. Stir constantly with a spatula until thick and creamy.
Divide the polenta mixture between two plastic wrap lined ramekins, sprinkling a small layer of blue cheese crumbles (about 1 Tbs.) in each ramekin.
Chill for at least 4 hours to allow the polenta to set.

Meanwhile, preheat the oven to 425 degrees.
Combine the meat, remaining cheese, and sea salt and pepper together to mix well. Mash the mixture into a baking ramekin.
Bake, covered, for about 35 minutes – or more if you like your burger well done.
Baking a burger is actually a magical way to keep the juices contained and keep the burger super moist and smooth. You will learn to love this method.

Serve the burger between your two corn cake “buns” as as a beautiful little beacon.
