So many times I hear and feel the intimidation of a simple salad creation exuding from those who are not quite as familiar with the kitchen as I am.
Salads are so simple for me. Just throw it all in and you’re set to go!
Apparently others feel nervous about just the right flavor combination, the texture…just everything.
I say, throw in some blueberries, fresh lettuce and chives, maybe a little chicken, fresh herbs for (basil and cilantro are always winners), gently toss in some avocado and drizzle with a salted oil and vinegar combo.
There you go.
Mix and match ~ follow your fruit and veggie cravings for the day. Really, there’s no way to do a fresh salad wrong.

Blueberry Basil Avocado Salad
1 cup cooked rice
1 cup fresh blueberries
4 oz. grilled chicken breast, sliced (optional)
2 cup fresh bibb lettuce
1 large avocado, peeled and chopped
1 Tbs. fresh chives, chopped
1/4 cup fresh basil, thinly sliced
2 Tbs. extra virgin olive oil
2 tsp. balsamic vinegar
sea salt and pepper
Throw it all together in your big ass bowl and go to town!
