Blue cheese burgers found their way on our kitchen table once again this week.

But this time, they were even bluer…

…yes, the tang Maytag blue cheese found its way inside a burger to top off the simple sweetness of a purpley-blue sweet potato.

Magic.

Not black magic, but BLUE magic!

Burger Blue (or Bleu)

1 lb. 85% lean grass fed ground beef
1/4 cup Maytag blue cheese
sea salt and pepper

1 large purple sweet potato
2 Tbs. butter
sea salt and pepper

2 cups baby spinach leaves
2 tsp. extra virgin olive oil
sea salt and pepper

Preheat the oven to 425 degrees. Wrap the purple tater in foil and bake for at least 60 minutes, until super soft. Remove from foil and mash together with butter, salt, and pepper. If desired, form into a round mold using a ramekin or 4″ spring form pan, allow to cool, and remove ~ otherwise a mash is just fine.

Meanwhile, combine the cheese, salt, and pepper with the ground beef and form two giant patties. Grill over high heat until medium rare and extra juicy.

Serve the blue burgers over the purple-blue taters, alongside some fresh spinach tossed with olive oil, salt, and pepper.

Be amazed.
