Spicy chicken and cheese…and a little avocado.
Sometimes you just need a little of that type of sandwich in your life.

Or sometimes, you may need A LOT of that sammie in your life.

My hubby adores the flavors and freshness of “California Chicken” anything.
It really is quite something, if you think about it:

  • freshly grilled chicken, cheesy spice, creamy avocado, and a few fresh veggies here and there

He might say,” what more could you ask for?”

My response…

“Guess!”

California Chicken Sandwich Twist

1 sheet frozen puff pastry, thawed
4 oz. thinly sliced pepper Jack cheese
6 oz. sliced chicken breast
1 handful fresh spinach leaves
1 medium avocado, sliced
sea salt

Preheat oven to 425 degrees.
Carefully roll out the thawed puff pastry to increase the size just a bit.
Line with the sliced cheese, then the chicken breast, then the spinach. 
Roll from one diagonal to another.
Then twist. Then turn.

Bake for about 20 minutes, until golden brown.
Allow to cool slightly before cutting. Serve with fresh slices of salted avocado.
