This unique and utterly divine creation was somewhat of a surprise.  I set into my culinary creativity with the full intent of dispatching a roasted carrot soup recipe using a hint of cumin.  The idea sounded warming and delicious.

Cumin reminds me of the southwest in many ways, as the spice is commonly used in Tex-Mex and Mexican dishes.  And, being that I discovered the perfect backdrop for photographing a brightly colored array of fresh food with a southwestern theme…turquoise delicately embedded into richly grained wood…I felt that the cumin and carrots were a poifect fit!

However, as I commenced my evening task of a divinely roasted soup, I encountered a cupboard absent of cumin.  My first thought was to whip up the intended recipe without any cumin at all ~ devising a plan to photograph the puree and never revealing my little secret.  I already knew how sweetly savory the combination was to be.

Just before closing the cupboard doors, though, the caraway caught my eye.  I slowly turned the cap to unscrew the cylindrical spice vessel, and to take in the aroma of the distinctly eye opening flavor of the caraway seed.  Intriguing.

A tiny dash of allspice to sweeten the pot, and the amalgamation of flavors was simply meant to be.

Caraway Scented Carrot Soup

2 Tbs. coconut oil
2 c. fresh carrot, roughly chopped
1/2 sweet onion, sliced
1 1/2 tsp. caraway seeds
1/8 tsp. ground allspice
1/8 – 1/4 tsp. pink Himalayan sea salt
2 c. homemade beef bone broth (or store bought, if necessary)
**1/4 c. full fat coconut milk**(optional)

Preheat oven to 425 degrees.  In a large baking dish, combine coconut oil, carrots, onion, caraway, allspice, and salt.  Roast until soft and golden brown, stirring every 15 minutes or so to evenly coat the veggies with the astounding deliciousness of the oil.  The roasting process may take up to 45 minutes.
Remove from oven and transfer veggies to a high speed blender.  Add broth and puree until smooth.  Add additional water if you prefer really liquidy soup ~ or add 1/4 c. full fat coconut milk for a truly decadent treat.
