What to do with you other than stir fry, sauté, steam, season, and consume…

Well, I say let’s make a cake.

Cauliflower Rice Cake-002

A savory cake.

A no bake cake.

Here we go!

Cauliflower Rice Cake

2 cups riced cauliflower
1 Tbs. fresh lemon thyme, rosemary, etc… (herbs from your garden), minced
1/4 tsp. Florida Sunshine Sea Salt (or your favorite flavored salt blend)
1 Tbs. grass fed gelatin (or agar agar for a vegan version)
1/4 cup HOT water

In a microwave safe bowl, “steam” the cauliflower in the microwave, along with the minced herbs for about 2-3 minutes.
Season with salt and sprinkle in the gelatin. Add the hot water and stir well.
Transfer to a mini cake pan or multiple muffin tins or liners and allow to cool for at least 4 hours in order for the gelatin to set.
