Not a giant fan of the typical “sweet treat,” I’ve been hankering to create some soft of chocolate delight at home these days.

On occasion, well each Saturday in actuality, I treat myself to a dark chocolate bar. Often that dark chocolate bar is slightly seasoned with some delicately delicious sea salt. You see, sweet and savory together truly are a match made in heaven for me.
This last Saturday, perhaps as I put on my celebratory Cinco de Mayo hat, I jazzed up the chocolate experience a bit with a little cherry, the brilliance of a little espresso, and a hint of balsamic vinegar.

 

These little bites made the list ~ Brian’s “oh my good god” list.

Cherry Espresso Balsamic Brownie Bites

1 1/4 cup raw pecans
3 oz. 55-70% exquisite caliber dark chocolate bar, broken into pieces
1 oz. strongly brewed espresso
1 Tbs. balsamic vinegar
1/4 tsp. vanilla salt
3/4 cup dried cherries, divided in half

Combine all ingredients, reserving half of the dried cherries, in the bowl of a food processor. Process until relatively smooth. Stir in the remaining dried cherries. Press into a small, plastic wrap or parchment lined baking dish. Chill until set. Easily remove the plastic wrap or parchment from the glass dish, lifting out the brownies, and cut into brownie bites ~ BIG brownie bites! 🙂
