Chicken Mushroom Magic

2 Tbs. butter (or olive oil)
8 oz. sliced wild mushrooms
1 Tbs. fresh thyme
1/4 tsp. Hampton Salt Company Black Truffle Artisan Sea Salt

2 Tbs. butter
1 large chicken breast
sea salt and pepper

Heat a large cast iron pot or skillet over medium heat. Melt the butter and add the mushrooms. Stir and cook until the shrooms release their juices. Add the truffle salt and fresh thyme. Continue cooking until the mushrooms are caramelized.
Remove from pot and set aside.
Add the additional butter and cook the chicken breast on medium until crunchy on one side, about 8 minutes. Cover and flip. Season with salt and pepper and cook until a knife inserted shows the juice is clear and the chicken is juicy but done.

Serve the chicken and mushrooms over fresh spinach (while hot, to wilt) and sprinkle with additional truffle salt.

Magic dust.
