Sweet Holiday Spice.
2 large zucchini, cut into thick coils using a spiralizing machine (or a veggie peeler for ribbons)
2 large red bell peppers, thinly sliced into rounds
2 Tbs. fig balsamic vinegar
1 Tbs. extra virgin olive oil
plenty of sea salt and pepper
Preheat the oven to 425 degrees. Toss the veggies with vinegar, oil, and salt and pepper. Roast for 20-30 minutes, stirring every so often and allowing the sugar in the balsamic to work with the oil for extreme and delightful caramelization.
Top with rosemary and fresh basil, if desired.
Serve alongside anything and everything on your Christmas table.
