Ok, I’ve made it abundantly clear that peanut butter and chocolate are a match made in heaven.

It’s SO obvious.

But what about adding banana into the mix?

Personally, I detest the fruit.
I despise it…

Unless it’s mixed with peanut butter – and chocolate too!

Chunky Monkey Banana Nice Cream Cake
(serves 1)

Layer 1:
10 chocolate fudge stuffed organic “Oreo” type cookies
1 Tbs. all natural, smooth peanut butter

Layer 2:
1/3 cup all natural, extra smooth peanut butter

Layer 3:
1 ripe banana, super duper smashed

Topping: 
2 chocolate covered frozen banana slices (Dole – or you can make them yourself)
coarse sea salt

Assembly:
Process the fudge chocolate cookies with the ‘s’ blade of a food processor until mostly crumbly. Add the 1 Tbs. peanut butter and continue to process until almost the texture of wet sand. Transfer to a parchment lined 4″ springform pan, pressing the crumbs firmly down.
Next, layer the peanut butter over the crumbs, quite liberally.
Spoon the smashed banana over the peanut butter layer. Cover tightly and freeze until solid, in order to create the “banana nice cream” layer.
Once solid, remove from freezer and springform and top with the chocolate covered banana slices and coarse sea salt.
