Yes, it’s October and it is certainly cooling down.

The air is brisk and I notice a bite to the air on my morning walks.
Fall, though, with the crisp coolness and the subtly of the light blue sky against bright bold colors of changing leaves, is my very favorite time of year.

That said, I’m still holding on a, just a bit, to the flavors of summer.

Cucumbers.

They really are just so good.

Cool as a Cucumber Salad-006

And, I discovered both Persian Lime Olive Oil AND Thai Lemongrass Mint Balsamic Vinegar…together…with cucumbers…and salt.
So, as simplistic as the combination above is, I found myself literally licking the plate clean.
Literally.
Do you have this image in your head? ~ actually, I continually ran my fingers across the plate, slathering up any remnants of the oil, vinegar, and salt, and seductively sliding my finger tip across my tongue.

It was heavenly.

Cool as a Cucumber Salad

Serves 1 – but not really, I wanted more

1 large cumber, thinly sliced
1 Tbs. Persian Lime Olive Oil
1 Tbs. Thai Lemongrass Mint Balsamic Vinegar
pink Himalayan sea salt

Toss all the ingredients together and devour.

Don’t forget to lick the plate – and your fingers – and anything else the elements came in contact with!
