Crispy Cheddar Bacon Balls and Avocado Salad-005

You know I can’t resist my veggies, particularly when it comes to greens.

And when fresh cilantro and lime are involved, all resistance is null and void in our house.

Crispy Cheddar Bacon Ball and Avocado Salad

1 lb. 85% lean grass fed ground beef
4 oz. pastured bacon, diced
1/4 cup sharp cheddar cheese, shredded
sea salt and pepper

2 cups mixed salad greens
1 cup cooked rice
1 large avocado, chopped
3/4 cup fresh cilantro
1 Tbs. fresh lime juice
1 Tbs. extra virgin olive oil
sea salt

Preheat the oven to 425 degrees.
Combine the beef, bacon, cheddar, and salt and pepper in a large bowl. Mix well and form into golf ball sized meatballs.
Cook, uncovered, for about 40 minutes, until the balls are super crispy, but not burned.

Gently toss the meatballs with the remaining ingredients and enjoy one amazing salad.
