I’ve written about the value of self-acceptance in terms of personal imperfections in the past.
I’ve learned about how perfectly imperfect we all are each and every day.
I’ve come to embrace many more of my own flaws and be at peace with things just the way they are.
I’ve become determined to count my blessings each and every day.

At this season in my life, though, the virtue of patience seems to be more and more prevalent. There IS something I want so very much in my life – a change, a newness, an excitement – I want it so badly I can taste it.
But I can’t force it.
I have no control.
And I’m impatient.
Soooo impatient.
I know this to be true about myself in a great deal of areas of my life.

While I logically know impatience only leads to vast imperfection – timing truly is everything and now may not be the perfect timing – I still find myself anxious and longing for my wants and my dreams…NOW

Despite this, I was reminded once again today, in my haste, that timing is everything and patience is a plus.

My cupcakes weren’t cooled before I anxiously pulled them from the pan, the icing wasn’t set before I slathered it atop the hot cakes…

Timing is everything. And when you don’t wait, things can get pretty messy.

Chocolate Cupcakes
3/4 cup Nuzest Creamy Chocolate Clean Lean Protein***
3/4 cup all purpose flour
1/2 tsp. baking powder
1/3 tsp. sea salt
1 1/2 sticks butter, softened to room temperature
1/2 cup sugar
3 large eggs

Preheat oven to 350 degrees. Line 12-cup standard muffin tin with paper liners.

In a medium bowl, sift together Nuzest, flour, baking powder, and salt. Set aside. In a mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each. Fold in the flour mixture.

Pour batter into cups, filling each 3/4 full. Bake until a toothpick inserted in centers comes out clean, 20 to 25 minutes.

Cool in the pan for 5 minutes. Transfer to a wire rack to cool completely, then spread with Easy Strawberry Frosting.

Easy Strawberry Frosting
1 large tub frozen whipped topping, softened
1 packet instant vanilla pudding
6 oz. strawberry preserves

Whip all ingredients together and chill for at least 30 minutes before frosting COMPLETELY COOLED Chocolate Cupcakes.

    1. That’s right! Who says presentation is everything, right? In some cases yes – but NOT in this case. Love you 🙂 We need to bake and drink wine together – then NOTHING will matter!
