Over the summer we took a trip to Portland with the notion that we would eat and drink our way through the Pearl District.

We did just that.

Oh, my.

The libations and nibbles in the PNW are out of this world.
We are still dreaming about a salad we shared on the rooftop of Noble Rot.

THAT was an “oh my good god meal,” without a doubt.

But before we ate…

…we drank ~ as WE do.

We drank a mule – but not just any mule.
Bourbon. Lemon. Ginger Beer.

It was refreshingly delicious.

Oh, and we had more than one…

Kentucky Lemon Mule

2 oz. Kentucky bourbon
4 oz. good quality ginger beer
twist of lemon
crushed ice

Pour the bourbon and ginger over the crushed ice in a mule mug. Top with a twist.
