The title says it all.  This sauce is “mad good.”

I offered a sample taste to a fellow human being.  He asked me before allowing the mouthwatering morsel to pass his lips, “is this healthy?”

I smiled at him, with a twinkle in my eye.  He tasted.  He smiled back at me.  “This tastes really good!  It has so much flavor.”

It is mad good.

Mad Marinara Sauce

1 medium white onion, finely chopped
2 large cloves elephant garlic, finely minced
1 teaspoon crushed red pepper flakes
1/3 cup vegetable broth
2 tablespoons tomato paste
1 28 oz. can crushed tomatoes
2 tablespoons fresh basil, chiffonade
1 tablespoon fresh rosemary, finely minced
1 generous tablespoon Fig and Fire Balsamic Reduction
Freshly ground smoked pepper and sea salt, to taste (I was rather LIBERAL with the amazing smoked pepper)

Heat vegetable broth over medium-high heat in a large skillet, bringing broth to a simmer.  Add onion, garlic and red pepper flakes, cooking until the onion turns translucent.  Add tomato paste, continuously stirring until fully incorporated.  Add tomatoes.  Reduce heat to low and allow sauce to simmer 15 minutes, for flavors to fully meld.
Remove from heat and stir in remaining ingredients.  Viola.  Mad good.

  2. Your marinara sauce picture was so great I could actually taste it. I do love anything with a tomato, like my roasted heirloom tomato soup with homemade broth is awesome. Right now I am “craving4more” marinara sauce!

    1. I’m with you. Heirloom tomatoes are heaven in the fall! I’ve made a sauce with fresh heirlooms, basil, garlic, balsamic, and cinnamon. Reducing it down with the balsamic and cinnamon is heaven on earth. Oh, but homemade broth too….now you’re talking! I had another item of feedback from a fellow human being sampling my sauce today: “You should put this in a bottle!”
