Sometimes you just need something super simple, super fast, and well, super soup.

In less than 5 minutes, you can have all of that – and more…a salubrious sense of satisfaction – with fresh peas and a touch of mint in a nice warm bowl!

Minted Pea Soup

2 Tbs. butter
1/4 small sweet onion, diced
3 cups shelled green peas (thawed, if frozen)
2 cups vegetable broth
1/4 cup fresh mint leaves
1/2 cup heavy cream
sea salt and pepper
crumbled feta cheese

Heat the butter over low heat and add the onion, sautéing until golden brown.
Transfer to a high speed blender along with the peas, broth, mint, and salt and pepper. Puree until smooth. Drizzle in the cream and process until fully emulsified.
Serve topped with fresh feta crumbles.
