Let’s face it. We all like Nutella and we all like cookies.

So, combining the simplicity and super sweet nutty chocolatey deliciousness of the chocolate hazelnut heaven with the ease of a basic sugar cookie means everyone is happy.

And, if you’re having a bit of lazy day and simply don’t want to get out the mixer ~ I have a secret…

You can “cheat” a little on this one if you want to…

Nutella Stuffed Sugar Cookies

2 3/4 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 tsp. vanilla extract
1 pinch salt
**For the LAZY DAY version, simply use store-bought cookie dough. This means you are really creating a two-ingredient cookie that’s out of this world…and it only takes 15 minutes!

3/4 cup Nutella (chocolate hazelnut spread)

Using a teaspoon, create dollop-sized balls of Nutella on a parchment lined baking sheet. Freeze for about 15 minutes, or while the oven is preheating.

Preheat oven to 350 degrees.
In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls and then flatten into rounds, and place onto a parchment lined cookie sheet.
Remove Nutella balls from the freezer and place one ball in the center of 1/2 of the cookie rounds. Top with the remaining rounds to create sandwiches.
Bake 15 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
