I certainly have been busy baking up sweets in the kitchen as of late.
I suppose it’s that time of year.

But sometimes you just want something soothing, comforting, and savory.

Go green – pesto green, that is.

Parmesan Pesto Pastry Pinwheel Wreath

1 recipe homemade croissant pastry (or two tubes of pasty rolls)
8 oz. homemade pesto
1/2 cup shaved parmesan cheese

Preheat oven to 375 degrees.
Roll out the croissant pastry dough into two 10×12″ rectangles on a flour dusted surface.


Speed the homemade pesto evenly over the dough, leaving about 1/2″ between the spread and all edges. Top with parmesan cheese.
Roll up the pastries, long side vertical, and chill in the freezer for about 20 minutes. 
Leaving one end intact, slice the chilled rolls down the center, “braiding” or twisting the two sides together. Using the two twists, coil into pinwheel wreaths.

Transfer to a parchment lined baking dish and bake for about 30 minutes, until golden brown.

Allow to cool, but still serve slightly warm, along with your favorite heated marinara sauce for dipping.
