Savory winter veggies and crisp sweet peppers create quite a meal for our own personal palates.
Personal Parsnip Pancake
1 Tbs. butter
1/4 sweet yellow onion, thinly sliced into rounds
1 medium parsnip, “spiralized,” “noodled,” or simply peeled and shredded
sea salt and pepper
1 red bell pepper, sliced
Heat the butter in an 8″ nonstick fry pan over low heat. Add the onion and parsnip and cook until the onion begins to caramelize. Meanwhile, whisk together the egg and salt and pepper. Pour the egg mixture over the cooked veggies and swirl the pan to ensure the egg gets in and around everything. Cover and continue cooking until the egg is set.
Garnish with fresh pepper slices and additional salt and pepper.
