I have to admit that this was NOT in any way shape or form going to be a blog post.
It was simply a method of getting a little extra protein down the hatch as I scooted out the door one morning ~ oh, and a way of using up the last of some protein powder I had lurking in the cupboard.
But, once I discovered the perfect little biscuit formation this created (I swore it was simply going to create a pudding like mess), and the fact that it tasted so profoundly delicious, I simply had to share.
Protein Power Biscuit
1 scoop vanilla protein powder – your choice – (1/4 cup)
1 egg (or sub one flax seed egg for a vegan version)
1 Tbs. coconut butter, softened
1/4 tsp. baking powder
Whisk all ingredients together in a small bowl or ramekin. Microwave on high for about 45 seconds – it make explode, so keep an eye on it.
Pop out of the ramekin and enjoy.
I think it would outstanding, as well, sliced in half and slathered with a little St. Dalfour raspberry preserves. But that’s just me.
