I grew up in the era of Rainbow Brite.  Upon reference or when thinking back to my Rainbow filled memories, I see hand-drawn unicorns, cartoon kittens and puppies, and star-filled skies with big puffy clouds.

I didn’t remember much of the story line or history of little Rainbow Brite, and was fascinated to learn the premise of the character and the series just recently.  The media franchise of the colorful little girl was actually created by Hallmark Cards.  Who knew?!?

Beyond Rainbow rescuing her seven Color Kids, I have vivid memories of Halloween costumes resembling not innocent little Rainbow, but very short skrits with rainbow-striped knee socks and skin-tight barely there tops.  Phew – I certainly was never one to go there in my costuming days!  I’m sure each October we see the ever sexy Rainbow Brite “throw back” costume abound.

Cartoons aside, back to business – the kale business!

I love kale, and I love color.  What could be better than a delicious salad of both?

Rainbow Kale

1 bunch lacinato kale, thinly sliced
1 yellow bell pepper, cored and thinly sliced
1/2 red onion, thinly sliced and grilled or sauteed and chilled
1 large carrot, shredded
1/3 c. raw pistachios
1/4 c. Dijon mustard
1/4 c. fresh squeezed orange juice (from one large orange)
2 Tbs. balsamic vinegar
1/4 c. extra virgin olive oil
1 clove fresh garlic, grated
Sea salt and fresh ground pepper

In a large bowl, combine kale, bell pepper, onion, carrot, and pistachios.  In a separate bowl, whisk together remaining ingredients.  Pour over veggies and toss to coat.  Season with additional salt and pepper if desired.

  1. I appreciate your reference to Rainbow Brite! My sisters both had the Rainbow Brite doll and I had Violet. I think she’s still at my parent’s house somewhere, tucked away in storage. The recipe is beautiful, by the way and sounds delicious!

    Oh, we should catch up soon over tea or something. I’d love to hear about everything going on with you!
