I simply love the fresh produce this time of year.
Although I’ll always miss the fresh markets and plethora of pleasing produce abounding on the streets of the PNW, I’ll take what I can get here.

And rainbow radishes are a rare breed in my neck of the woods.

This was a supreme treat.

Delicate, delightful, delicious.

Rainbow Radish Salad

1 large purple radish, spiralized
1 large watermelon radish, spiralized
1 Tbs. lemon olive oil
sea salt

After spiralizing the veggies, gently steam the strands until barely tender and the spicy raw bite is removed.
Drizzle with lemon oil and sprinkle with salt.

Simple and so delicious.
