In last Friday’s Awesome Ending Fridays’ post, I teased with images of these amazing little treats for my #10.  They really are amazing…
In fact, in all my food creations, it is very rare that I sample while I’m cooking.  I just seem to sense what’s going to taste good, what flavors will pair well together, and how the outcome will transpire.  If I’m lucky, (or maybe the innocent bystander is the lucky one), I’ll sweep up a recruit taster for their opinion.  Most often the reaction is as I anticipate.  And, when it’s not, I’ll typically ignore the suggestions….
These little bites, though, I simply could not resist tasting my way through the creation.  I KNEW they were going to knock my socks off.  And, the finished product –
TO DIE FOR!  They taste exactly like cookie dough – you know the stuff we all used to eat raw as kids when making cookies with Mom…the stuff we weren’t supposed to eat because of the raw egg, etc.  (That’s another topic all together)
In any case, these babies are vegan, gluten-free, raw, free of any refined or processed anything, and Paleo-friendly.  Did I cover all the trends…oh but wait, they are simply “real food” and they taste delicious!

Raw Cookie Dough Brownie Bites
Brownie Layer
2/3 c. raw pecans
1/2 c. raw almonds
8 Medjool dates, pitted and chopped
4 Tbs. unsweetened cocoa powder
2 tsp. coconut oil
2 tsp. vanilla extract

Combine all ingredients in a food processor.  Process until smooth.  Press into an 8×8″ baking dish.  Drizzle with a little extra melted coconut oil if added moisture is necessary and the brownie layer feels too crumbly.

Cookie Dough Layer
6 Tbs. coconut oil, melted
3 Tbs. coconut milk
2 Tbs. raw honey
2 tsp. vanilla extract
1 1/4- 1 1/2 c. almond flour
1/2 c. dark chocolate chips (or vegan chocolate chips)

Whisk together liquid ingredients until well combined.  Add almond flour to create dough-like consistency.  Fold in chocolate chips.

Spread Cookie Dough mixture over Brownie Layer.  Chill until well set.  Cut and divide into bite-sized Raw Cookie Dough Brownie Bites!

  1. They look fantastic – mind you i;d have a job making them because the kids would start knicking everything before it got in the tin

    1. Trust me…it will be tough enough for you to not dig in before they are ready, let alone the kiddos! I had trouble myself 🙂
