And one with BOTH fruits and veggies?
You’re crazy not to feel your mouth water just at the thought on a hot summer day.
Mmmm…
- Slathered across a crispy tortilla chip (maybe)
- Piled a top a crunchy plate of romaine (now that’s more like it)
- Portioned out over a grilled chop (that sounds pretty good too)
- Rolled up inside a super soft and dreamy tortilla – perhaps with a little sharp feta or cotija (now you’re talking)
Or
- simply by the spoonful
well, that’s just how I roll…
Super fresh. Super fragrant. Super delicious.
This salsa fresca fiesta is just downright super.
Salsa Fresca
Fresh Fruit and Veggie Fiesta
2 cups cooked black beans (rinsed and drained, if from a can)
1 cup fresh pineapple, chopped into about 1/2 ” pieces or chunks
1/2 red bell pepper, chopped into 1/2 ” pieces
1/2 orange bell pepper, chopped into 1/2 ” pieces
1/2 sweet red onion, finely diced
1 large jalapeño pepper, seeded and minced
1 large clove garlic, minced
1 large bunch fresh cilantro, chopped
1 Tbs. red wine vinegar
1 Tbs. extra virgin olive oil
plenty of sea salt
Combine all fresh ingredients together and allow to “marinate” and “meld” for at least 2-3 hours. The flavors will combine and form an immaculate…. {insert noun here}.
