I had the rare opportunity to spend this last Saturday alone.
While I typically adore my “me” time, I felt rather lonely this weekend.
Thus, what did I do to solve the problem?
I hit the kitchen for some super delicious, ultra crunchy sea salt and rosemary scented brownies.

We all know how much I love the combination of salty and sweet, as well as savory.

The aromatics are quite amazing here.

Oh, and I also enjoyed a little (or a lot) of Sexual Chocolate red wine blend alongside my brownie treats!

Salted Rosemary Dark Chocolate Brownies

1 cup coconut oil, melted
3/4 cup sugar
2 Tbs. real maple syrup
3/4 cup +1 Tbs. unsweetened cocoa powder
1 Tbs. fresh rosemary, chopped
1/4 tsp. fine sea salt
1 tsp. vanilla extract
2 large eggs
2 oz. melted semi-sweet baking chocolate
1/2 cup all purpose flour
1 tsp. coarse sea salt flakes (for topping)

 

Preheat the oven at 325. Grease an 8-inch brownie pan or bread loaf pan for thicker brownies.
Combine the coconut oil, sugar, maple syrup, cocoa powder, 2/3 rosemary, and fine salt in a bowl, as well as melted chocolate. Stir in vanilla and and whisk in eggs until the mixture is smooth and shiny. Slowly sift in the flour until well combined. 
Place batter in prepared baking pan and bake for about 20 min in an 8-inch pan, or for about 35-40 minutes in a loaf pan – until a toothpick comes out with moist batter.
Remove from oven, sprinkle with remaining 1 tsp. rosemary and coarse sea salt.
Cool completely before cutting into squares…that is if you can wait!
