I was presented with yet another challenge in the kitchen involving horseradish.
The spicy root is one of those things that can be quite tricky, unless you’re using the creamy store-bought “prepared” version for your roast beef sammie or prime rib meal.

I wanted something just a tad bit more gourmet than that, and much more enticing.

I got it made 🙂

The key was the combination of the subtle sweet of white sweet potato with the caramel delight of the date sesame spread…and topping it all off with the tang of really, really good bleu cheese.

Sesame Date Horseradish Chicken

1-2 large boneless, skinless chicken breasts
1 large white sweet potato, thinly sliced into rounds
1/2 cup fresh horseradish root, peeled and shredded (watch out – this is potent!)
2 Tbs. butter, melted
sea salt and pepper
1/4 cup Mighty Date Mediterranean Spread
2 oz. Maytag bleu cheese

Preheat the oven to 425 degrees.
Toss the chicken, sweet potato slices, and shredded horseradish root with sea salt, pepper, and melted butter.
Bake, covered, for about 45 minutes, until the chicken is cooked through. Toss once or twice to ensure all components stay moist.
Serve with a dollop of the Mighty Date Mediterranean Spread and crumbled bleu cheese.
