Christmas cookies – sugar cookies!

Simple, delicious, and delicately decorated.

Simple Sugar Cookies

8 Tbs. butter, softened
1 1/2 cups sugar
2 large eggs
1 tsp. vanilla extract
3 cups all purpose flour
1/2 tsp. baking powder
1/2 tsp. sea salt

1/2 cup confectioner’s sugar
1-2 Tbs. water or milk

In a large bowl, combine the flour, baking soda, and salt. In a separate bowl, beat together the butter and sugar until well blended and fluffy. Add the egg and vanilla and beat again, for about 1 minute. Add the flour mixture and beat on low until well blended. Divide the dough into 3-4 equal sized discs, wrap in plastic, and refrigerate 4-6 hours, or freeze for 45 minutes.

Preheat the oven to 350 degrees.
Remove the dough from the fridge and roll out between 2 sheets of parchment paper, until about 1/4″ thick. Using your favorite cookie cutters, create as many cookies as possible.
Bake on a parchment or Silpat lined baking sheet for about 12 minutes.
Remove from the oven and allow to cool.

Once cool, whisk together the powdered sugar and water or milk. The amount of liquid will determine the viscosity of your glaze – it’s up to you.

Drizzle the glaze over the cooled sugar cookies.
