Believe it or not, this recipe has been on my “docket” and list of things to make for almost three years.
Yes, three years.


I’m not quite sure why it took so long for me to get my act together on this one. It’s basically a savory version of my ever popular Chocolate Peanutbuttery Pillows of Deliciousness. Remember, those little cookie pillows landed me a job! Why in the world did I wait so long? Now I’m waiting for my luck to turn and to see what sort of opportunities are around the corner with these lucky puffs.

That said, they are puffs of deliciousness this time, not just pillows. And, they are forever savory.
Peanut butter and spinach with garbanzo beans…almost like a spinach falafel, but baked and certainly packed with healthy, creamy, wonderfully delicious peanut butter and green spinach. You really can’t go wrong here. They are amazing.

Puffs…they are magic.

Spinach Garbanzo Peanut Puffs

1 1/4 cup canned garbanzo beans (chickpeas) rinsed and drained
1/2 cup + 1 Tbs. all natural, fresh ground peanut butter
1/2 cup cooked spinach (frozen and thawed is fine)
1 tsp. baking powder
1/4 tsp. sea salt

Preheat oven to 350 degrees. Combine all ingredients in the large bowl of a food processor and whir until smooth.
Form into 1″ diameter balls and bake for about 15 minutes, until puffy and delightful.

Serve with a drizzle of melted peanut butter and salt, or alongside roasted veggies and chicken for a push of protein.

Or, just pop these savory suckers right into your mouth. You can’t go wrong. Come on, folks, it’s peanut butter. YUM!
