So I made the cake…

…and then I ate some…

It’s melty, molten, super sweet, and surprisingly simple.

“It’s *$!king delicious,” in the words of my honey pie.

Super Easy Chocolate Lemon Lava Cake

1 10 oz. box gluten-free cocoa cereal
1 cup butter, melted
3 eggs
1 cup milk of any type (almond, hemp, soy, cow) or even water
8 oz. Easy Lemon Curd
powdered sugar

Preheat oven to 375 degrees.
Process all the cereal in a food processor until the consistency of flour or sand.
Whisk together melted butter and eggs, then stir in the water and cereal powder.
Transfer to a parchment lined pie or cake pan.
Dollop spoonfuls of the lemon curd on top of the cereal cake better and then swirl into the mixture.
Bake for 1 hour at 375 degrees. Then, reduce oven temperature to 275 and bake for another 30-40 minutes, until an inserted toothpick comes out clean.
Allow cake to cool before dusting with powdered sugar.
