Very similar to the cilantro version of this soup I created a few months ago, I was presented with the opportunity to cater a dinner party and really wanted THAT SOUP, but had a few of those genetic cilantro soap tasters in the group.

Thus, I amended…and it was great.

Sweet Potato Lime Basil Soup

1 lb. cooked and peeled sweet potato
juice and zest of 1 lime
1/2 cup veggie broth
1 dash sea salt
2-3 Tbs. fresh basil
1/2 cup heavy cream

Purée the sweet potato, lime, broth and salt together until smooth. Add the basil and pulse to chop. Finally, add the cream and pulse a few more times.

That’s it!
