Okay, so I’m being lazy again.
Forgive me. I just don’t have a whole lot to say.
This recipe and idea is SO easy, though.
Peanut butter balls (aka Buckeyes) are one of my very favorite childhood treats from Christmas time. They are THE BOMB! (little peanut butter chocolate bombs, to be exact).
Anyway, as I sorted through the cupboards with a hankering to create something sweet, I saw a sleeve of Club crackers…reminding me of the inevitable lovely and delicious amalgamation of salty and sweet. I just so happened to have some uber sweet white chocolate laying around.
Thus, we now have a Sweet & Salty White Chocolate Buckeyes recipe on the blog!

Sweet and Salty White Chocolate Buckeyes

1 sleeve Club crackers (Keebler brand, of course)
2 cups smooth peanut butter (NOT all natural)
2 cups powdered sugar
4 oz. white chocolate

Process the crackers into a fine grain in the food processor. Add the peanut butter and sugar and whir until dough-like and smooth.
Form into golf-ball sized cookie rounds and place on a parchment lined cookie sheet.
Transfer to the freezer and chill for several hours.

Melt the white chocolate over very low heat, stirring constantly and ensuring the chocolate doesn’t burn.

Drizzle over the frozen buckeye balls.
Allow to cool.
Store in the fridge
