In addition to my Quince Mint “event” earlier this week, my friend treated me to a little fresh fruit salad she had recently whipped up.
She’s a kitchen star, that Anne. She is.
Flavorful, fruity, and fantastic, of course. Oh, and it’s all a gorgeous hue of fuchsia.
Fresh Fruit Salad
1 cup red grapes, halved
1 cup seedless watermelon, balled or chunked
1 cup strawberries, quartered
1 Tbs. raspberry balsamic vinegar
1 Tbs. fresh mint, chopped
Combine the fruit with the vinegar and toss lightly, as not to bruise the berries. Allow to marinate for at least 1 hour.
Serve garnished with mint and a bit of fresh goat cheese, feta, or Kite Hill artisanal almond milk cheese.
