I asked him if he liked pasta.
“I’m Italian, of course!”

I asked him his favorite herbs.
“Cilantro and basil. What about you?”

I love both cilantro and basil. I find them aromatically intoxicating, in fact.
I asked him if he’d ever had the two with lime.
“No. Never.”

Basil Cilantro Lime Pasta

2 cups all-purpose flour
2 large eggs
zest of 2 limes
2 Tbs. fresh basil, torn

Sauce:
juice of 2 limes
1/4 cup extra virgin olive oil
1 preserved lime, rinsed and thinly sliced
1 tsp. raw honey
1 tsp. sea salt

2 Tbs. fresh basil, torn
1/2 cup fresh cilantro, chopped

Prepare the pasta using this method.

Bring a large pot of salted water to a boil and add the noodles. Cook for 3-5 minutes. Carefully remove from the water with a slotted spoon.

Meanwhile, combine all sauce ingredients in a glass jar and shake vigorously.

Toss with the freshly cooked noodles and fresh herbs, along with freshly grated parmesan cheese.
