That’s right.  This one’s pretty easy.  AND, it’s pretty fantastic too.

It seems as though summer is winding down.  The daylight hours linger less and less, the sounds of children playing and laughing in the streets are somewhat muted by the diesel engines of the school buses, and the fresh summer produce is beginning to dwindle.

I chose to taken advantage of every last morsel of sweet garden goodness while it still lasts.

A – Avocado
B – Berry
C – Chicken

The “c” can also denote the amazing slices of cucumber and the flavor bunch of cilantro in this salad.

Easy as A-B-C Salad

Serves 2

2 large chicken breasts, seasoned with salt and pepper, grilled, and sliced (make sure these are warm and just off the grill!)
2 large avocados
1 cup fresh cilantro, chopped
1 cup fresh strawberries, sliced
1/2 large cucumber, thinly sliced
1 cup live sprouts

4 cups fresh salad greens
1 Tbs. extra virgin olive oil

sea salt and pepper

In a medium sized bowl, mash the 2 avocados with plenty of salt and 3/4 of the chopped cilantro.  Add the sliced chicken (while still hot) to the avocado mixture and allow the avocado to begin to “melt.”  Assemble two large salad bowls with the remaining salad ingredients.  Divide the avocado and chicken concoction between the two bowls and mix fairly well.  Drizzle with olive oil and liberally sprinkle with additional salt and pepper and the remaining cilantro.
