I often deliver treats to the folks downstairs – we live above a restaurant.
Cookies, bread, pies…

I like them – and I think they like me.

However, one of my favorite friends downstairs is a gluten-free gal.
I don’t often bake gluten-free, until now.

Grace, these are for you.

Gluten Free Chocolate Chip Orange Basil Shortbread

8 Tbs. cold butter (1 cup), chopped into 1″ pieces
1 cup gluten free flour
1/2 cup powdered sugar
1 large egg
1/2 tsp. sea salt
1/8 tsp. baking powder
1 cup dark chocolate chips
1/2 cup candied orange peel, finely chopped
2 Tbs. fresh basil, finely chopped

Combine the butter, flour, sugar, egg, salt, and baking powder in the large bowl of a food processor. Pulse until crumbly.
Add the chocolate, orange peel, and basil and pulse a few more times until fully incorporated.

Chill for 2 hours.

Preheat oven to 325 degrees.
Line a small, square baking dish with parchment and spread the chilled dough evenly over the bottom.

Bake for about 45 minutes, until golden brown.

Cool before slicing.
