This time, it’s in the meat.
And the crackers.
And the cheese.

Okay, it’s the entire amalgamation of specific ingredients and the love and home-cooked care put into these gorgeous meatballs that makes them so special.

You’re going to have to trust me on this.
Typically, I’m all about organic and all-natural ingredients. But this time, go for gold. There’s just something about the Italian sausage, the “American” Keebler crackers, and the Greek Mizithra that creates the magic here.

Mediterranean Meatballs

1 1lb. (King Soopers brand) Italian sausage – yes, you really do need to look for this brand
1 cup Keebler Club cracker crumbs – yes, this brand is important too – otherwise it’s not the same
1 large egg
1/4 cup grated Mizithra cheese
sea salt
pepper

Preheat the oven to 425 degrees.
Combine the sausage, cracker crumbs, and, and salt and pepper. Really dig deep and the mixture all together with your hands.
Form into golf-ball (or slightly larger) sized meatballs.
Cover with foil in a large baking dish and bake for about 40 minutes, until crispy brown.

Serve with sautéed kale, if desired.
