The days are beginning to get longer and we can bask in the sunshine just a little bit more each morning and evening.

Regardless of what Punxsutawney Phil says today.

That doesn’t mean it’s getting any warmer ~ well, maybe some days.

In any case, sometimes salads are necessary in the winter, to bring us back to the longing for hot summer days and glorious back porch dinners.

For me, I must say, I don’t need a salad to bring me back to my desire for a looooong warm day, but this wintery green salad recipe hits the spot in other ways.

Winter Greens Salad

1 cup fresh kale, shredded
1 cup Brussels sprouts, shredded
1/2 cup radicchio, shredded
1/2 cup fresh asparagus, chopped and slightly steamed
1/4 cup Maple Mustard Dressing
sea salt and pepper
1/2 cup wild caught canned tuna or sardines, drained

In a large bowl, combine all ingredients, sans the fish, and massage together until the kale and sprouts begin to soften. Toss in the fish.

Enjoy your winter greens.
