Grain Free Vegan Cardamom Scented Biscotti

2 ½ cup blanched almond flour
2 Tbsp. arrowroot or tapioca starch
½ tsp. sea salt
½ tsp. baking soda
1 tsp. cardamom
1 tsp. dried orange peel
½ cup date paste
1/3 cup slivered almonds (pecans, walnuts, pumpkin seeds, etc.)
¼ cup currants (or other dried fruit)

 

Preheat oven to 350.
Line a baking sheet with parchment paper.

 

In a food processor, combine almond flour, arrowroot powder, salt, baking soda, and spices. Pulse until well combined and then add date paste & pulse until the dough forms a ball.

 

Remove dough from the food processor and add almonds and raisins with hands or a spoon.

 

Form 2 logs with the dough on a parchment-lined baking sheet. Bake at 350 degrees for 15 minutes, then remove from oven and cool for 1 hour.

 

Cut the logs into ½-inch slices on the diagonal with a very sharp knife & place on a baking sheet.  Lower oven heat to 300 degrees and bake slices for about 12-15 minutes.

 

Remove from oven and let sit for 20 minutes to set, cool, and become crispy.
