Caraway Scented Carrot Soup
2 Tbs. coconut oil
2 cups fresh carrot, roughly chopped
1/2 sweet onion, sliced
1 1/2 tsp. caraway seeds
1/8 tsp. ground allspice
1/8 – 1/4 tsp. pink sea salt
2 cups homemade beef bone broth (or store-bought, if necessary)
**1/4 cup full fat coconut milk* *(optional)
Preheat oven to 425 degrees.
In a large baking dish, combine coconut oil, carrots, onion, caraway, allspice, and salt.
Roast until soft and golden brown, stirring every 15 minutes or so to evenly coat the veggies with the astounding deliciousness of the oil.
The roasting process may take up to 45 minutes.
Remove from oven and transfer veggies to a high-speed blender.
Add broth and puree until smooth.
Add additional water if you prefer really liquidy soup ~ or add 1/4 cup full fat coconut milk for a truly decadent treat.
