Sweet Potato, Maple Ham, and Swiss Quiche
1 Flaky Grain-Free Pie Crust
1 Tbs. Kerrygold butter
1/2 small sweet onion, diced
1/4 lb. maple glazed ham (pastured, of course), chopped into 1/2″ cubes
3 Tbs. pure maple syrup
sea salt and freshly ground pepper
6 pastured eggs
1 sweet potato, peeled and baked until soft
1 cup Kerrygold (or something else super great) Swiss cheese, chopped into 1/2″ cubes
1 small Roma tomato, sliced
1 small yellow tomato, sliced
Preheat oven to 425 degrees.
In a medium-sized skillet, over medium heat, melt the butter and caramelize onion to perfection, along with the salt and pepper seasonings. Add the ham and maple syrup to fully coat.
Set aside.
In a large mixing bowl, smash the potato and whisk in the eggs. Add the chunks of cheese, followed by the caramelized onion and ham mixture. Thoroughly combine.
Pour into the pre-made pie crust (gluten-free pie crust is a nice substitute, or even leave the crust out altogether and pour into a glass pie plate for baking).
Layer with alternating colored tomato slices.
Sprinkle with a tad bit of coarse salt and pop in the oven for about 35 minutes.
