Meyer Lemon Salt

 Meyer Lemon Salt

1 large Meyer lemon (peels - NO PITH - only)
1 cup kosher salt

Combine the peels and salt in an airtight container. 

Store and allow flavors to develop for several weeks.

Remove and discard the peels (or, leave them in to result and stronger and stronger salt each week).

Season over anything and everything.
