Accidental Nankhatai: Chocolate Cherry Cashew Vanilla Almond Butter Cookies 🍒

Early‑season cherries (rare treasures in my corner of the world) seemed to glow from every stall at the market, along with Cherry Almond Butter, Chocolate Covered Cherries, and Cherry Vanilla Cashews. The cherries  🍒  were calling my name and I couldn’t resist letting them spark something new in my kitchen. What emerged was a cookie that felt both familiar and entirely my own: rich, nutty, studded with chocolate and cherries, and deeply comforting. When I shared a photo of these bites of cherry yumminess with a dear friend in India, he surprised me with the sweetest revelation: I had unknowingly baked something reminiscent of Nankhatai, the traditional Indian butter cookie beloved for its melt‑in‑your‑mouth texture and gentle warmth. Flavored Vodka Shots

Flavored Vodka Shots

Red Chile-Coriander-Lime
and
Vanilla Cardamom

 

Makes 12 1 oz. shots (6 of each flavor)

 

12 oz. 80 proof vodka
12-18 whole coriander seeds
1 red chili pepper, thinly sliced
peel of 1 lime, thinly sliced (no pith!) into 6 pieces
6 whole cardamom pods
1 small vanilla bean, cut into 6 pieces
2-3 tsp. cane sugar

 

Divide the coriander seeds among six, 1-ounce glass jar (2-3 in each jar). 
Divide the pepper slices and lime peel the same way. 
In the remaining 6 jars, portion out the cardamom pods, vanilla bean, and cane sugar as well.


Fill each jar with 1 oz. of vodka.


Allow the flavors to mix and mingle 4-14 days.


Strain and simply enjoy any way you please.
